Great Northern Bean Salad








Ingredients Needed


1 medium dish/bowl



2 cans of Great Northern Beans



1 red bell pepper



A few green onions



about 10 grape tomatoes



Balsamic vinegar



Olive oil



Salt and Pepper



Parsley (for color)









Instructions



1. Slice onions and tomatoes to preferred sizes



2. Cut the red bell pepper in half and slice, then chop one half of it and set aside the rest for future use. (a whole pepper is a lot for this amount of bean salad..)



3. Open the two cans of great northern beans and drain the excess juices. (to be more thorough in cleaning the beans of the juices, put beans into a colander and rinse)



4. Put the beans into your preferred dish or bowl and add your fresh cut vegitables on top. Then drizzle the olive oil across the interrior of the dish. Add a couple table spoons of balsamic vinegar.



5. Mix the contents together and add more vinegar to taste (if wanted). Also add salt and pepper (to taste)

After your final mix, add Parsley on top

Pepper Stir-Fry
























Needed

1 wok or skillet

green bell peppers

red bell peppers

yellow bell peppers

veggitable oil


Instructions


1. Slice bell peppers and onions to preffered size


2. Add 1 tsp. vegetable oil to wok or large skillet


3. Set stove to medium-high heat


4. Add vegetables and stir-fry for about 5 min. or to desired tenderness. Stir occasionally.



~ For an extra flavor ~

you can add cashews or peanuts and/or you could serve it over lo mein noodles or rice.

Intro to the adventure


Hi my name is Liz. (Though I'm going by the name Beta on Blogger.com) I've discovered Blogger through my best friend Phil and so I have decided to start my own Blog.


I'm starting this blog because I have been recently been trying to find, create and use vegetarian recipes. I've come across a few and as I use them I am going to start posting them for anybody to check out and try.


Along with the recipe I will give my opinion on whether or not I like it and if I can I will try to post a picture of the dish. The only downside to posting these recipes is that not all recipes have directions. Sometimes I will just Post the ingrediants because sometimes you are supposed to add as much as you want to what ever it may be.


I'm going to start posting as soon as I can. I hope I can get a lot of people to check out my Blog.
